Agave nectar comes from the agave plant, which grows mainly in Mexico. It’s the same plant that’s used to make tequila (yes, really!). But instead of fermenting it into booze, the sap is filtered, heated, and processed into a sweet syrup.

The result is a golden liquid that looks a lot like honey but has a much lighter consistency—and in some cases, an even sweeter taste. Depending on how it’s processed, agave syrup can be light, amber, dark, or raw. Each version has its own flavor and color, but overall, agave has a mellow sweetness that blends easily into almost anything.
